This is a fall staple around our house. We readily swap out the apples for pears, peaches or other fruit. The key to a crisp top is to handle the topping like pastry – work the butter gently into the mix while leaving it fairly coarse. Add a few ground nuts to the crisp topping for another variation.
1 cup All-purpose flour 2 cupsRolled oats 1 cup Brown sugar 1 tsp.Ground cinnamon ½cup Butter, softened
4 cups Peeled, cored and sliced apples ½cup White sugar 1 Tbsp.Cornstarch ½ tsp.Vanilla extract
Preheat oven to 350 degrees. In a medium bowl, combine flour, oats, brown sugar, cinnamon and softened butter. Stir until crumbly. Combine apples, cornstarch and sugar. Place into buttered pie plate and cover with crumble mixture. Bake until golden, about 45 minutes.
