Apple Fritters

These delightful fritters are a perfect end to a fall dinner.  We prefer to dust them with icing sugar and serve right as they come out of the fryer.  Speaking of which, you’ll need a deep fryer to make these.  Alternatively, you can deep fry in a large pot on the stove, but be forewarned that this can be dangerous.


Apple Fritters


500g pastry flour

8g yeast

30g sugar

1 tsp. salt

200ml cider

300ml 2%milk

4 yolks

100ml oil

4 whites

30g sugar

Apples, peeled, cored and sliced

Vegetable oil for frying


Combine in a large bowl, flour, yeast, sugar and salt, whisk to combine.  In a separate bowl, whisk together, cider, milk, yolks and oil.  With a whisk, add wet ingredients to dry ingredients until just combined.  Cover and allow to rest for 1 hour.  After the dough is rested, whisk egg whites and sugar to stiff peaks.  Fold egg whites into rested batter.

Dip the apple rings into the batter and fry in a deep fryer until golden, about 2-3 minutes.
