Artichoke Dip

This is a great make ahead dip for entertaining.  It’s super creamy and decadent, and the goat cheese adds a nice tang to the dish.

 

Artichoke Dip

 

50 oz. Canned  artichokes, drained

1.5 Lb. cream cheese

1 Lb. goat cheese

3 Cups shredded aged cheddar

1 Cup parmesan cheese

1 1/2 Cups sour cream

3/4 Cup mayonnaise

1-2 tsp.  minced garlic

1 Tbsp. ground cumin

 

Drain artichokes, gently press dry and place in mixer with paddle attachment.  Add Cream cheese and beat on high until moderately smooth.  Add all other ingredients and whip until combined.
