Black Olive Tapenade

Tapenade is a Provencal dish typically served with breads or vegetables, but can also be served with chicken or fish.   We use black olives here, but you can mix them up and use green, Kalamata, Nicoise, etc.

 

Black Olive Tapenade

 

3 Anchovies

3 Cloves Garlic

½ tsp. Dijon Mustard

1 1/2 Cup Black olives, pitted

2 Tbsp. Capers

2 Tbsp. Lemon juice

1/2 tsp. Black pepper

1/2 Cup Virgin olive oil

3 Tbsp. Parsley, chopped

 

Combine all ingredients except oil in a food processor and puree.  With the machine running, slowly add oil in a steady stream.  Adjust seasoning if necessary.
