Broccoli Salad

I think this was one of the first dishes I made consistently as a kid, and it’s still a big hit at summer parties.  The dried fruit and nuts are infinitely replaceable, so make this salad your own.

Broccoli Salad

3 Cups Broccoli florets (about 1 bunch)

1/2 Cup Chopped red onion

1/4 Cup Nuts, such as almonds, pecans, sunflower seeds or pine nuts

1/2 Cup Dried fruit such as cranberries, raisins, currants or other

1/2 Cup Feta cheese

1/2 Cup Yogourt

1/4 Cup Mayonnaise

2 Tbsp. Sugar

1 Tbsp. Lemon juice

Salt and pepper to taste

In a bowl, combine broccoli, onion, nuts and fruit.  In another bowl, whisk together all other ingredients.  Toss with the salad and adjust seasonings.
