Chocolate Cream Cheese Brownies

I used to participate in an organic food festival called Feast of Fields.   There were dozens of vendors, each supplying their own dishes to the general public.  It was always a great day out.  One standout was this recipe from Lorene Sauro of  Natural Life Health Market.

 

Chocolate Cream Cheese Brownies

 

Base

3/4 cup butter

4 eggs

2 cups sugar

1 1/4 cup all-purpose flour

1/2 tsp. kosher salt

1/2 tsp. vanilla extract

1 1/4 cup chopped semi-sweet chocolate

2 Tbsp. cocoa powder

 

Cream together the butter and sugar.  Melt chocolate in a double boiler, and mix into the butter.  Add eggs and vanilla.  Mix the flour together with the salt and cocoa powder.  Stir gently into the butter mixture.

 

Filling

1/2 Lb. cream cheese, softened

1 egg

1/4 cup sugar

1/2 tsp. vanilla

 

Whisk cream cheese in a bowl until smooth.  Whisk in the other ingredients.

Put half of the brownie base in a greased 9×13 pan and spread evenly.  Put the cream cheese mixture over the top and spread.  Spread the remaining brownie base over top of the cream cheese mixture.  Bake at 350 degrees for 40 minutes, until brownie is just set.  Set aside to cool

 

Chocolate Glaze

1 cup chopped semi-sweet chocolate

1/2 cup cream

1/3 cup butter

Place the chocolate in a bowl.  Heat the cream and butter in a saucepan and pour over the chocolate to melt.  When the chocolate has melted, whisk uintil smooth and pour over the cooled brownie, tilting to spread the glave around evenly.
