Chocolate Devil’s Food Cake

Chocolatey, fluffy and moist, this is the last chocolate cake recipe you’ll ever need.  Be sure to use Dutch cocoa powder, it’s far better than the pale stuff you normally find in grocery stores.  If you don’t have buttermilk you can stir 1 tbsp. lemon juice into 1 cup of milk and let sit for a few minutes.

 

Chocolate Devil’s Food Cake

 

2 Cups        Packed brown sugar

1 3/4 Cups    Flour

3/4 Cup       Cocoa powder

2 tsp.        Baking soda

1 tsp.        Baking powder

1/4 tsp.      Salt

1 Cup         Buttermilk

1 Cup         Strong coffee

1/2 Cup       Vegetable oil

2             Eggs

 

Combine flour, cocoa, Baking powder and soda and salt.  Add the sugar and stir to combine.  In a separate bowl, beat the eggs and add the buttermilk, oil and coffee.  Pour the wet ingredients over the dry and whisk until smooth.  Bake the batter in greased pans at 350 degrees until centre springs back.   Finish with your favourite frosting.
