Ice Cream

Read the ingredient list on almost any commercial ice cream, and you’ll be horrified.   Real ice cream, like our basic recipe below, is a combination of egg yolks, sugar and dairy.  That’s it.  It’s easy to take this base recipe and make almost any flavour of ice cream you choose.  We’ve added a few options at the end of the page.

 

Ice Cream

 

8 egg yolks

1/2 cup sugar

2 cups milk

2 cups heavy cream

 

Scald the milk and cream in a heavy saucepan.  In a large bowl, whisk the yolks with the sugar until pale.  Whisk the cream into the yolk mixture slowly.  Return to the saucepan and cook over low heat, stirring constantly, until the mixture coats the back of a spoon.  Transfer to a container and chill for a few hours.  Freeze in ice cream machine.

 

Vanilla Ice Cream:  Add 1 vanilla pod, cut in half and scraped, into the milk before scalding.  Remove the vanilla pod before continuing.  Alternately you can add 2-3 tsp. of vanilla extract.

Chocolate Ice Cream:   Reduce sugar to 1/2 cup. Whisk in 8 oz. melted semi-sweet chocolate.  Alternately you can whisk 1/2 cup cocoa powder into the milk.

Coffee Ice Cream:  Increase sugar to 3/4 cup. Whisk 1/2 cup very strong coffee (or espresso) into the milk.

Strawberry Ice Cream:  Mince 1 Lb. of strawberries and mix with 1/2 of the sugar.  Allow to rest for 1/2 hour before whisking into the mixture.
