Pommes Anna

This simple dish transforms the humble potato into a delicious combination of soft and crispy.  Use a good baking potato or Yukon Golds for the best results.

 

Pommes Anna

 

1 Lb. potatoes, such as russet or Yukon gold

1/4 cup butter, melted

salt and pepper

 

Slice potatoes as thinly as possible, using a mandoline if available.  Arrange a layer of potato slices in the bottom of a greased oven proof dish.  Brush the surface with butter and season lightly with salt and pepper.  Continue adding layers in the same fashion.  Cover with parchment and bake at 375 degrees until golden and potatoes are cooked through, about 45 minutes.  Cut the pommes anna into wedges to serve.
