Spiced Bar Nuts

There are numerous versions of this recipe all over the internet, but few attribute the probable source – The Union Square Cafe Cookbook.  We’ve been making these amazing snacks for our catering and restaurant clients for many years, they’re totally addictive!


Spiced Bar Nuts


1 Lb. Assorted nuts.

2 Tbsp. chopped rosemary

1 Tbsp. unsalted butter, melted

1/2 tsp. cayenne pepper

2 tsp. kosher salt

2 tsp. brown sugar


Lay nuts on a baking sheet and toast in a 350 degree oven until lightly golden, about 10 minutes.  In a large bowl, combine rosemary, cayenne pepper, brown sugar and butter. Add the warm, toasted nuts to the spiced butter and toss well. Add kosher salt and toss to coat thoroughly.
