Tomato Sauce

The foundation for a multitude of other recipes, this sauce is worth the effort and beats the pants off store bought.  There’s no secret that a great sauce starts with great tomatoes – get the best canned tomatoes you can get your hands on, such as San Marzano.


Tomato Sauce


125ml Olive Oil

250ml Chopped Onions

125ml Chopped Celery

250ml Chopped Carrots

50ml Minced Garlic

3 Litres Canned Crushed Tomatoes, or 3 Litres Plum Tomatoes, Crushed with Your Hands

60ml Pureed Fresh Basil

30ml Dried Oregano

15ml Dried Thyme

Salt and black pepper to taste


Heat the oil in a heavy saucepot.  Puree the vegetables in the food processor until smooth.  Sauté vegetables with the garlic in oil until soft, about 5 minutes.  Add all other ingredients, rinsing tomato can out with water or red wine.  Cook over medium heat until thick, about 30 minutes, stirring frequently.  Adjust seasonings as necessary.
